Lamb Shami Kebab Wrap Recipe

When I was at school, one of my favourite packed lunches was a homemade Shami Kebab sandwich which my mum used to prepare fresh in the morning, just before my siblings and I drove off to school with either the chauffeur or dad. I can still clearly remember the aroma of the freshly fried Shami Kebabs and the combination of those kebabs with some tomato ketchup drizzled on them made the sandwiches taste even better! 

Mum always used to prepare huge batches of Shami Kebabs as they're always handy in emergency situations, they're brilliant for packed lunches and even perfect to be served as a starter at any of the family dinners or get-togethers called 'dawat' in Urdu. Also, in the previous years, a very common trend was guests turning up without informing and considering the fact how hospitable or 'mehmaan nawaz' my mum is, we always used to have goodies in the kitchen and some frozen items out of which the kebabs were always a winner! 

Just following the footsteps, even I like to keep things prepared prior to an ocassion or for the time when the need may arise, however talking specifically about the Lamb Shami Kebabs, I've really been longing to have these but it's been quite some time since I last prepared them. Shami Kebabs can be prepared and easily frozen for future use, continuing the idea of 'al-desko' that I talked about in a previous post along with the  idea of a Lamb Tikka Wrap as an office meal idea. The idea behind the term 'al-desko' is to create recipes that are perfect for anyone to take to work for lunch, highlighting the fact that it should be convenient for us to have lunch on the work desk. Creating new recipes for the office lunch meals by reusing leftover food is a brilliant idea of reducing waste. 

Lamb Shami Kebab Wrap Recipe

For a Lamb Shami Kebab wrap, all you need to do is to grab a wholemeal flatbread left from previous night's dinner, add a fried kebab in it along with any of your desired sauce and wrap it up. Some fresh green salad from previous night's dinner can also work perfectly as a side and this would make a great healthy option.

Lamb Shami Kebab Wrap Recipe

INGREDIENTS FOR LAMB SHAMI KEBAB:
(Makes 12-14 kebabs)

For cooking:
1 kg lamb mince, cleaned & washed well
11⁄2 tsp salt, or as required 
1 tsp ginger paste
1 tsp garlic paste
1 tsp cumin powder
2-3 cups of water
Dried round chillies
5-6 Cloves
1-2 Cinnamon stick
1 small piece of onion
Half cup chana daal (lentils)
2 medium sized bay leaves
2-3 cups of water

For mixing:
2 green chillies
1 large chopped onion 
Few chopped coriander leaves
Few chopped mint leaves
1 beaten egg
Oil for frying

INSTRUCTIONS:

Add all the ingredients in a pot along with 2-3 cups of water.
Boil under a high heat.
Once boiled, put the lid on and keep it on slow flame to cook until the lentils and the mince are cooked well.
Once cooked, put the mixture in a food chopper to create a mixture.
Add the mixture to a bowl, add 2 chopped green chilies, 1 large chopped onion, coriander, mint leaves and a beaten egg. Mix well.
Divide the mixture into small portions and neatly shape them into round shaped kebabs.
These kebabs can be stored in the freezer for later use.
For immediate use, fry the kebabs on a hot frying pan with 2 tsp oil for 2-3 minutes each side until brown.

Preparation time: 15 minutes
Cooking time: 30-40 mins
Serves: Makes 12-14 kebabs

For the wrap: 
To prepare a wrap, use a wholemeal wrap for a healthy option. 
Add a kebab, some sliced onions and sauce of your choice. I prefer either a chilli tomato ketchup or a coriander and mint chutney.
Serve the wrap with some fresh green salad! 

Preparation time: 2 minutes
Cooking time: 5 mins
Serves: 1 kebab per wrap

  4. I love kebabs and always use chicken so swapping to lamb and getting the added boost of B12 is something I would want to eat more of in my diet
