INGREDIENTS FOR SPICED LAMB MINCE & SPINACH PANCAKES:
For the filling:
2 tbsp oil
1 medium sliced onion
2 medium chopped tomatoes
1 tbsp ginger garlic paste
1 green chilli
250 grams lamb mince
1/2 tsp salt or as required
1/2 tsp black pepper
1/2 tsp red chilli powder
1/2 tsp dried mixed herbs
200 grams baby spinach (preferably fresh)
For the pancake batter (Prepares 6 pancakes):
50 grams, plain flour
1 large beaten egg
150 ml milk
1/2 tbsp butter


INSTRUCTIONS:
For the filling:
Add the oil in pot and heat it gently.
Add onions, and cook until they turn brown.
Add tomatoes, ginger garlic paste, green chilli and cook until they're soft.
Now add lamb mince, salt, black pepper, red chilli powder and dried mixed herbs.
Cook until the meat changes colour.
Add baby spinach leaves, cover the lid and cook for 15 minute or until it's cooked and any water, if present evaporates.

For pancakes:
Add all the ingredients in a bowl, and mix well until you're happy with the consistency of the batter.

Heat a frying pan, and add some butter or oil.
Pour the batter on the pan, and leave it to cook.
Turn the pancake upside down to ensure the other side is cooked as well.

Assembly:
Place the pancake on a plate.
Add the filling of spiced lamb mice and spinach before serving.
Serve warm for an enjoyable experience.

Preparation time: 5 - 10 minutes
Cooking time: 25 minutes
