I can hardly remember going to the kitchen as a teenager because mum was always there to look after my meals, but later after getting married, I've always made it a habit to prepare fresh food everyday just like my mum. However, cooking food daily does not mean there are never any leftovers from the previous night's meal. Although with regards to the quantity of food, I do try to be as accurate as possible, it's sometimes quite unavoidable to ensure there are no leftovers and I always try my level best not to waste any food. I've often seen people who end up throwing leftover food, but there are so many new recipes one can create with leftover food and this not just gives you a brand new meal for the next day, but also helps in reducing any food wastage. 

I've been lucky because the first company I worked for, had it's own restaurant that served fresh food everyday - from curries to sandwiches and to many other different cuisines and it fulfilled my requirement as all the food met my dietary requirement. However, in the UK it's not always easy to find options that fulfil our dietary requirements, especially in the towns where my family and I have lived so far and this is the reason why I always give packed lunch to my husband when he goes to work.

The idea behind the term 'al-desko' is to create recipes that are perfect for anyone to take to work for lunch, highlighting the fact that it should be convenient for us to have lunch on the work desk. It is not always necessary to create a new recipe for the office lunch meals, but one can always reuse the previous night's food and create something that would also be easier to eat. An example for desk meal ideas using leftover food can be chicken sandwich using the last bits of chicken from the curry you may have cooked. All you need to do is take out the piece of chicken, wash and shred it and add mayonnaise and cucumber to create something new - And your partner or husband won't even guess!

We often do BBQ parties, and lamb tikka is always a hit! However, there are so many food items in a BBQ party, that we always end up having some leftovers. We never throw these leftovers but always reuse them and one brand new idea for using lamb tikka is to create a lamb tikka wrap, which is also perfect to pop in a lunchbox, making it an easy next-day meal that combats food wastage.

Lamb Tikka Wrap Recipe

Lamb Tikka Wrap Recipe

INGREDIENTS FOR LAMB TIKKA:
(Serves 4-5)

For the marinade:
1 kg boneless lamb cubes (1 inch or smaller), cleaned & washed well
Slice 2 medium sized onions, fry until soft and then grind them before adding
1 tbsp papaya paste or meat tenderizer
4 tablespoon whisked yogurt 
11⁄2 tsp salt, or as required 
1 tsp ginger paste
1 tsp garlic paste
Few drops of oil
2 tsp lemon juice
1 tsp red chilli powder
1 tsp cumin powder

For cooking: 
4 tbsp oil for cooking
2-3 cups of water

INSTRUCTIONS:

Marinate the lamb cubes preferably a night before cooking as that will give meat time to tenderise, otherwise marinate it for at least 2 hours.
You can either cook this on a BBQ or you can also cook it in a pan on the stove.
Add the marinated meat in the cooking pot, add 4 tbsp oil.
Add 2-3 cups of water and cover the lid for the meat to cook on a low flame. 
Since the meat was marinated with papaya, it will take lesser time to cook. 
After 20 minutes, open the lid to check the quantity of the water left in the pot. 
Also check the meat and you'll get an idea how much time it needs to fully cook.
Add more water if needed and if you think the lamb will take more time to cook.
The water will evaporate on it's own, and by the time the meat is cooked, you will just have the boneless lamb cubes. 
Optional: If you want the smoky tikka effect, burn a coal on the stove, add a small piece of foil on the lamb cubes and put the burning piece of coal on it. 
Remember to spill a few drops of oil on the coal, otherwise the smoke won't come out.
Also, make sure to cover the lid immediately so all the smoke remains in the pot. 

Preparation time: 15 minutes
Cooking time: 30 mins
Serves: 4-5 people

Lamb Tikka Wrap Recipe

INGREDIENTS FOR LAMB TIKKA WRAP:
(Serves 1)

Preparation:
Store bought tortilla wraps
1 small finely sliced onions
1 small salad tomato or 4-5 cherry tomatoes
Spicy mayonnaise 
Hot & sweet sauce
Mint leaves (optional)

Instructions:
Place a tortilla wrap on the kitchen work top or on a work board.
Add 6-8 lamb tikka cubes, add sliced onion and tomatoes.
Drizzle some spicy mayonnaise and the hot and sweet sauce. 
Add a few mint leave for extra flavour (optional)
Fold the wrap, use a cling film or foil to wrap and pop it in the lunch box for the next day's 'al-desko' meal at work.
You can also add a creamy potato salad as a side.

Preparation time: 5 mins
Serves: 1

IMPORTANT COOKING TIPS:

Lamb will cook quicker if a pressure cooker or an instant pot is used instead of a normal pot.
Add freshly cut green chilies for the extra heat.
You can also add the lamb tikka cubes in a paratha instead of a tortilla.
