If it would've been normal circumstances, I would've surely said I've already been to a few BBQ parties hosted by friends and family. However, due to the current situation and the lockdown in the UK, I can only say that I've just been able to do BBQ once until now, and that my family and I did in our own personal garden without having anyone else around. 

This year the National BBQ Week falls between May 25th - 31st 2020, and I've come up with a recipe that is easy for all of us - for those who have their own personal garden and even for those who do not have access to outside space. 

The tender meaty lamb Gola Kebabs marinated with different spices are really flavourful and something everyone can enjoy. Moreover, they also make a perfect starter for any dinner party or festive season too, and that's the reason why I decided to share the recipe.

The Major Ingredient - The Lamb! 

Being a versatile ingredient, lamb is loved by people from all cultures and walks of life, especially because of the numerous festive recipes that can be created by using different cuts of lamb making it a perfect ingredient for every day meals or for special occasions.

I wouldn't hesitate in defining lamb as a fantastic ingredient, because it can't just be used for one all time favourite dish i.e. lamb chops served with mashed potatoes, but can also be used in lots of different recipes and in a variety of cuisines. Even by using the economical cuts of lamb, one can easily produce incredible lamb dishes. There are lots of different cuts of lamb - chops, rump, leg, shank, breast, chop, loin rack, neck and shoulder. Lots of everyday meals can be prepared using lamb as an ingredient in just 30 minutes, and lamb is not just easily available and affordable, but full of flavour too!

INGREDIENTS FOR GOLA KEBAB:
(Serves: 6)
For marinade:
500 grams minced lamb meat (washed, cleaned & drained)
1 tbsp salt (or as required)
1 tbsp ginger garlic paste
1 tbsp red chilli powder
1 tbsp coriander powder
1 tbsp garam masala
1 tbsp cumin powder
1 tbsp papaya paste
1 tbsp lemon juice
1 tbsp gram flour 
1 tbsp yogurt
1 tsp corn flour
1 tsp chaat masala
1/2 fried onion 
1 green chili 
Oil for frying
Coal for a smoky taste

INSTRUCTIONS:
Add all the ingredients to the lamb mince, and mix well (Ready made papaya paste is easily available at Asian stores, otherwise fresh papaya can be used to make a paste).
Cover the dish with a lid and refrigerate it for an hour.
Add the mince in a chopper,  blend everything and take it out in a bowl.
To make the kebabs, use your hands to shape them, add a straw in the middle of each kebab and remove the straw to make a hole in the centre.  
The kebabs can also be cooked on a preheated grill if one doesn’t have a BBQ to hand or an outdoor space, while for cooking them on the stove, you need to add 4 - 6 tbsp of oil to a pan and fry the kebabs on low heat, ensuring to cook each side for 5 minutes.
For cooking on a BBQ, cook the kebab in each side for 5 minutes and make sure to brush some oil on them.
For serving, you may use a normal serving dish or a sizzler plate. 
Place a sliced onion on the bottom of your serving plate and put the cooked kebabs on the bed of onions. For garnish, you can also place sliced lemon and green chilies. They're lovely for those who need an extra kick to their kebabs.
Green mint chutney also works perfectly as a dip alongside the Gola Kebabs.

Preparation time: 25 minutes
Cooking time: 10 - 15 minutes
Serves: 6 adults (makes 12 kebabs)

Tips:
Make sure there is no water in the lamb mince before adding your spices.
Although this step isn't essential, but for an enhanced smoky flavour, you can put a burnt coal in the pan containing the mixture of minced lamb meat or cooked kebabs. This can also be done before serving the lamb kebabs if you're not cooking the lamb kebabs on a BBQ and instead choose to cook them on a pan or a grill.
Once the lamb mince is blended, make one kebab and cook to taste the level of spices you want. Spices can also be adjusted at this stage, in case you want to be adventurous and want something spicer! However, spicy dips and chutneys always help in adding an extra kick for those who prefer spicer food.
