Lots of recipes with the classic pairings such as garlic, mint and rosemary work perfectly with lamb.  For the Lamb Love Week, I've come up with the recipe of 'Lamb Stew', a mild yet flavourful dish perfect for both adults and children alike and something that provides all the necessary nutrients to all ages, because of the meat content added to it.

Lamb Stew Recipe

INGREDIENTS FOR LAMB STEW:
(Serves 6-8)

1 kg boneless lamb cubes (washed well)
1/2 tsp meat tenderiser 
1 tsp papaya paste 
1 tsp ginger paste
1 tsp garlic paste
6 tbsp cooking oil (for frying onions)
3 medium finely sliced onion (fried until golden brown) 
1 tsp salt, or as required 
1/2  tsp red chilli powder
6 whole black pepper-corns
5 whole cloves
1 red dried round chilli 
2 cloves of sliced fresh garlic
2 medium sized fresh green chillies
2 tbsp natural full fat yogurt 

INSTRUCTIONS:
Add papaya, ginger and garlic paste to the lamb cubes, and keep aside for some time.
In a pot, add oil and fry the sliced onion until golden brown. 
Add the marinated lamb along with salt, chilli powder, peppercorns, cloves, dried round chilli and  sliced fresh garlic and cook on medium heat for 5 minutes.
Add the green chillies, 2 cups of water, and cook the lamb on low heat, until tender.
Once the lamb is cooked, make sure the water content is evaporated and the sauce of the stew is thick.
Add the yogurt and cook for another 5 minutes.
Serve hot with rice or Indian flatbread.

  3. I rarely cook with Lamb purely as I don't really know what else to do with other than a roast dinner. I like the sound of this recipe, so I'll have to give it a try
