Since the sun is now shining brightly, and summer holidays will soon begin, most of you would be hosting BBQ parties for family and friends. In my family, this is the most awaited season as we get to enjoy some delicious meaty treats with some fancy mocktails and summer desserts. Although we plan for a variety of different items in the menu, adding lamb is definitely a must and the ‘Lamb Bihari Boti’ is an absolute favourite amongst everyone! 

The tender meaty kebabs marinated with lots of different spices and condiments, are really flavourful and something everyone enjoys the most!

INGREDIENTS FOR LAMB BOTI KEBAB:
(Serves 4-6)
1 kg lamb meat (cut in thin strips) 
350 grams finely sliced onion (fried & blended into a paste) 
150 grams ginger paste
1 medium finely sliced onion, blended into a paste
1/2 tsp Garam Masala powder
1 tsp Salt, or as required 
1/2 tsp White cumin powder
1 tsp Red chilli powder
1/2 tsp Chilli flakes
1/2 tsp Black pepper
150 grams Papaya paste 
1 tbsp yogurt 
1 tsp Bihari Kebab spice mix (any brand you prefer) 
Half cup cooking oil (to be added to the meat)

INSTRUCTIONS:
Fry the onions until brown, cool them, and blend them into a paste before adding it to the meat. 
Add few drops of oil, and blend ginger (do not add water), then add it to the lamb strips. 
Add 100 grams papaya paste (Ready made papaya paste is easily available at Asian stores, otherwise fresh papaya can be used to make a paste).
Add all the other ingredients in the meat, and mix well. 
Cover the dish with a cling film and refrigerate it for at least 6 hours, preferably overnight.
2-3 hours before BBQ, add 50 grams papaya paste and mix well.
For the BBQ, use skewers to thread the meat.
For longer strips, thread it at least 3-4 times so the meat doesn't fall off the skewer while on BBQ (thread once per inch of meat strip).
Cook the lamb strips for 20-30 minutes on good constant heat, or as required depending on how you like consuming the meat, either well done or rare. I prefer mine well done, so that takes up to 30 minutes to cook.

Tips:
Make sure there is no access water in the marinade. 
Serve the lamb boti kebabs hot in a skewer with parathas (Indian flatbread, either homemade or store bought) and assorted chutneys. My personal favourite is the yogurt dip, either the one prepared with tamarind sauce, cumin powder and salt or the green mint yogurt dip.
While cooking the meat on BBQ, make sure to grease the meat with some cooking oil and spray a bit of water to ensure the meat stays soft and juicy.
Quantity of the meat needed to serve guests can also vary depending on how extensive the menu of the BBQ party is.
For guidance, we were 8 people, and had 4 different BBQ items including Bihari Boti, Tikka, Seekh Kebabs and Malai Boti (1 kg each item) along with corns, bread and dips. All this food was enough for our party and everyone easily enjoyed generous portions.
